Ingredients
For the crust
- 1 1/2 cups almond flour
- 1/4 cup powdered erythritol
- 1/2 cup butter, melted
- Pinch of salt
For the filling
- 225 g cream cheese, softened
- 3 large eggs
- 1/2 cup fresh key lime juice
- 1 tbsp lime zest
- 1/2 cup powdered erythritol
- 1/2 cup heavy cream
- 1 tsp vanilla extract
Instructions
- Preheat oven to 175°C (350°F). Line an 8x8-inch pan with parchment paper.
- Mix almond flour, erythritol, butter, and salt. Press into pan. Bake 10–12 minutes until golden.
- Beat cream cheese and sweetener until smooth. Add eggs one at a time.
- Stir in lime juice, zest, cream, and vanilla. Mix well.
- Pour filling over crust. Bake 20–25 minutes until set but slightly jiggly.
- Cool completely. Chill 2+ hours before slicing into bars.
