Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes (drained, chopped)
- 2 cups fresh spinach
- 1 tsp Italian seasoning
- Salt & pepper, to taste
- Fresh basil, for garnish (optional)
Instructions
- Season chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat.
- Cook chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, sauté garlic until fragrant (about 1 minute).
- Add chicken broth, heavy cream, Parmesan, and sun-dried tomatoes. Simmer 3–4 minutes until slightly thickened.
- Stir in spinach and cook until wilted.
- Return chicken to skillet, spoon sauce over the top, and simmer 2 minutes to reheat.
- Garnish with fresh basil and serve hot.
