High Protein Cottage Cheese Bread

Ingredients
- 1 cup (240 g) cottage cheese
- 4 large eggs
- 1 cup almond flour
- 1 tbsp psyllium husk (optional)
- 1 ½ tsp baking powder
- ½ tsp salt
- ½ tsp garlic powder (optional)
- 1 tbsp olive oil or melted butter
Instructions
- Preheat oven to 175 °C / 350 °F.
- Line a small loaf pan with parchment paper.
- Blend cottage cheese until smooth.
- In a bowl, whisk eggs, almond flour, baking powder, salt, and psyllium if using.
- Stir in blended cottage cheese and olive oil until batter is smooth.
- Pour batter into loaf pan and smooth the top.
- Bake 35–40 minutes until top is golden and a toothpick inserted comes out clean.
- Let loaf cool completely before slicing.
